Ingredients:
2oz Aalborg Jubileums Aquavit
1oz Green Absinthe
1oz spruce tip infused simple syrup—plain is fine too
Juice of one fresh lemon
1/2oz Creme de Violet
White from one egg
Small handful of ice
Shaker
Fine cone strainer
Coupe glass

Place egg white in shaker and dry shake (no other liquids or ice added) vigorously for 20 seconds, until a bit foamy. Add aquavit, absinthe, lemon juice, and simple syrup to shaker. Shake vigorously. Pour mixture over strainer into coupe glass. (Tip: tap the side of the strainer gently with shaker to get more of the foam and mixture to strain through.) Gently pour 1/2 ounce of Creme de Violet around the outer edge of the coupe glass into cocktail. Enjoy!

Nordlys is the Norwegian and Danish word for the Aurora Borealis. This cocktail is akin to the famous Aviation cocktail, another nod to the sky. Yet, it has a lovely kick of the popular Scandinavian flavors of fennel and star anise, just enough tartness and sweetness, and it resembles the beautiful spectre which appears so starkly on some Northwoods winter nights.

This recipe was developed in honor of Ely’s recent International Dark Sky Association designation as a dark sky sanctuary by Rena Claire Hartman Rothauge.

Rena was born and raised in Minnesota, and is very proud to be from such a wondrous land. She holds degrees in writing, literature, and literary theory from Gustavus Adolphus College and New York University. She has lived and worked in England, New York City, Philadelphia, Portland, and Minneapolis before succumbing to the siren call of the boreal forest. Presently, she is exploring her rich Nordic heritage through a culinary lens, and gearing up to compile and publish a cookbook. Her friends call her “the rebel Martha Stewart of the North.” She is also nearing completion of certification as a health coach from the Institute for Integrative Nutrition, and teaching certification from Cosmic Kids yoga. She plans to use her new expertise to enrich the lives of the youth in her community teaching movement and cooking. Rena lives south of Ely with her outdoorsman husband, magical young daughter, two boisterous dogs, and one bullhead minnow, saved from the local bait shop last winter, who she has named Daisy.
